Pure, raw, seasonal honey from Langstroth hives located in remnant wilderness on the Limestone Coast. We searched long and hard to find a like-minded beekeeper who runs Langstroth hives in an ethical manner, and this honey is second to none. Bottled in small batches so we can taste the flavour profile and terroir of the region.
Our current batch of raw honey is from hives located near a large stand of Blue Gum trees. Other mixed Eucalyptus species and local wildflowers were within range of the hives, so while the honey is mostly blue gum, it isn’t mono-floral. It will crystalize over time to a relatively fine grain.
The flavour profile varies slightly between batches, but in general: Caramel aroma. Sweet on the front but not overly so. Butter and caramel in the middle, and slightly salty at the end. Toffee finish but no strong aftertaste.
