Our signature honey. Each batch is post-brood honey from a single hive, allowing you to taste the full complexity of the terroir. This honey is a flavour explosion that tells a story of the flowers, land and time when the bees were foraging. The jar is dark glass to preserve the flavour and antibacterial qualities of the honey.
No two batches will ever taste the same and we guarantee that every jar will be exceptional. Similar Warre honey from the Blue Mountains has featured on Masterchef Australia!
If the flavour alone isn’t enough to entice, consider also that each batch is tested for antimicrobial activity, and with a total activity of 20+ (sometimes up to 45+), this honey is equivalent to a very, very high grade Manuka.

Here are a couple of examples of our honey flavour profiles from the past:
Salted caramel and butterscotch. Something spicy - black pepper? Vanilla and caramel. Caramel finish that lingers at the back. A great eating-out-of-the-jar honey.
Spices and fruit at the front. Anise, hint of cloves, and a medley of fruits in the middle, with a lingering mixed spice finish. Pairs well with either panna cotta or brie.
