Hive #40 is located in the dappled shade of an organically run mixed-fruit orchard, surrounded by remnant Stringybark forest and coastal scrub. I harvested this one in late spring/early summer.
Tasting notes: Salted caramel and butterscotch. Something spicy - black pepper? Vanilla and caramel. Caramel finish that lingers at the back. A great eating-out-of-the-jar honey.
